SERVES: 4

Ingredients

  • 1 medium eggplant
  • ¼ c. extra virgin olive oil
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. cumin seed
  • ¼ tsp. salt
  • 4 piece flat bread
  • 1 c. crumbled feta cheese
  • ½ c. Kalamata olives
  • 1 tsp. fresh-ground pepper

 

Directions

1) Heat a grill to medium-high heat. Heat oven to 400°F. Combine eggplant, 1/4 cup oil, cumin, and salt in a large bowl, toss to combine, and set aside.

2) Grill the eggplant until just cooked through -- about 8 minutes. Remove from the grill and set aside. Brush both sides of flat breads with remaining oil. Grill the flat bread for 5 minutes.

3) Turn the flat bread over, top with eggplant, cheese, olives, and pepper and grill for 5 more minutes. Transfer pizzas to a baking pan, bake for 8 minutes, and serve immediately.
