Pinot Grigio vinegar gives this dessert a lighter, more pleasant flavor than stronger white-wine vinegar will.

- ¼ c. pinot grigio vinegar
- ¼ c. sugar
- 2 ripe peaches
- ¼ tsp. tricolor peppercorns
1) Make the dessert: Combine the vinegar and sugar in a medium bowl and stir to dissolve sugar. Add the peaches to the vinegar mixture, sprinkle with the pepper, and toss gently to combine. Chill for 30 minutes to 1 hour in the refrigerator. Serve with lemon sorbet, if desired.
